Curried Beef
400 gm lean boneless beef
2 tsp. vinegar
3 cups vegetable oil for deep-frying
2 oz clear stock
2 tbsp. oil
1/4 tsp. salt, or to taste
1/4 tsp. ginger, chopped
1/2 tsp. sugar
1/4 tsp. garlic, chopped
1 tsp. cornflour dissolved in 1 tsp. water
1/4 tsp. onion, chopped
1/4 tsp. red chilli pepper, chopped
Cut beef into 1-inch square chunks. Heat the oil in a wok over low heat to very hot. Deep-fry the beef until it is cooked through. Remove beef, drain, and set aside. Pour the oil out of the wok, leaving a thin film on the bottom. Reheat until a haze appears on the oil surface. Add the curry oil, ginger, garlic, onion, chilli pepper, vinegar, stock, salt and sugar. Stir the cornstarch to blend and add the beef, stir-fry for 2 minutes, or until the sauce is thickened. Sprinkle with sesame oil and serve.

Honey Beef With Sesame Seeds
1/2 pound beef steak
1 green bell pepper
1 cup bean sprouts
1 stalk celery
Marinade:
4 tsp. liquid honey
3 tbsp. soy sauce
1 tbsp. water
1 green onion, chopped
2 tsp. cornstarch
1 clove garlic
2 slices ginger
1 tsp. cornstarch mixed with 4 tsp. water
3 tbsp. white sesame seeds, toasted
4 tbsp. oil for stir-frying
Sauce:
1 tbsp. oyster sauce
1/4 cup chicken broth
1 tsp granulated sugar
Wash and drain the vegetables. Remove the stems and seeds from the bell peppers and cut into thin strips. Rinse and thoroughly drain the bean sprouts. String the celery and cut on the diagonal into thin strips.
Cut the steak across the grain into thin strips. Combine with the marinade ingredients, adding the cornstarch last. Marinate the steak for 15 minutes.
Combine the sauce ingredients and set aside. Heat the wok over medium-high heat. Add 2 tablespoons oil to the heated wok. When the oil is ready, add the beef. Brown briefly, then stir-fry until nearly cooked through. Remove from the wok. Add 2 tablespoons oil. Add the garlic and ginger and stir-fry briefly until fragrant. Add the green pepper and the celery. Stir-fry briefly. Push the vegetables up to the sides of the wok. Add the sauce in the middle. Heat briefly, then add the cornstarch and water slowly, stirring to thicken. Add the steak back into the wok. Add the bean sprouts. Mix everything together. Sprinkle with the sesame seeds before serving. |
